Souvlaki, the popular Greek food

Souvlaki, the famous Greek food, consists of small pieces of grilled meat served on a skewer, together with some other ingredients in pita bread, or on a dinner plate. Traditional meat used for souvlaki is pork and lately chicken, but there are other variations as well, like beef, lamb, swordfish, even a vegetarian souvlaki with no meat at all. The secret of a great souvlaki, is that the meat is prepared in advance, cubed into small pieced and marinated for a few hours in freshly squeezed lemon juice and olive oil, combined with herbs and spices (oregano, thyme, salt and pepper etc.).

For this recipe you will need: 2 1/2 pounds of pork shoulder cut in 3/4 inch cubes, 1 teaspoon of oregano, 1/2 teaspoon of freshly ground pepper, 1 tablespoon of sea salt, 2 tablespoons of red wine and 2 tablespoons of olive oil.

How to prepare it? In a bowl, pour wine and oil over the pork and toss to coat. Sprinkle salt, pepper, and oregano and toss again, then cover and refrigerate for at least 2 hours. Use 8 inch wooden skewers, thread approximately 6 pieces of meat on each (this should result in about 12 skewers). Grill the meat turning until well browned, for about 15 minutes. Serve directly on the skewers with a squeeze of lemon.
